I participated in a Fast Five Meals recipe swap with Savings.com and my fellow DealPro’s. The purpose of the recipe swap is to help get the word about about the new Meal Planning classes with Savings.com. Meal planning not only helps combat stress in the kitchen, but it also can help drastically reduce your grocery budget and help you spend less time in the kitchen.
A great method to help you save in the kitchen is to determine Fast Five Meals. These are 5 easy to prepare meals that you could have on the table in less than 20 minutes. I made Spinach and Mushroom Quesadilla’s for my family courtesy of Alea from Premeditated Leftovers. The recipe was super easy to prepare and my entire family loved it. It is definitely going on my Fast Five Meals list!
Ingredients:
- 12 tortillas
- 1½ cups cheese
- 1½ – 2 cups spinach leaves
- 1½ cups thinly sliced mushrooms
- 2 green onions, thinly sliced
Directions:
- Brush the pan with oil and heat until hot. (350 on an electric skillet or medium high on the stove).
- Place tortillas on pan.
- Sprinkle 1 -2 tablespoons of cheese on each tortilla.
- Place ~1/4 cup of spinach leaves on top of the cheese.
- Spread sliced mushrooms over the spinach.
- Sprinkle sliced onions over the mushrooms.
- Top with 1 – 2 tablespoons of cheese.
- Place another tortilla on top and press it down to evenly smush the ingredients between the tortillas.
- Cook until the bottom tortilla is brown.
- Flip and cook until the other tortilla is brown, approximately 3 -4 minutes each side.
- Repeat until all of your quesadillas have been made.
- Cut in half and serve while hot.
Tip: Serve with salsa and sour cream.

Keilbasa, cut up potatoes & corn kernels. Put together in a Pyrex pan and season. Cover with foil and stick in the oven! 🙂

Pizza Pasta: box of noodles, ground turkey, pizza/spaghetti sauce, black olives, pepperoni. Cook turkey, boil noodles, add all ingredients to turkey, summer and serve. Can be served with cheese but we are a dairy free house.
