Frugal Eats: Valentines Cake

Budget Savvy Diva put together a special Valentines Day Edition for her weekly Frugal Eats post:

I am an avid baker – usually from scratch – but for today I decided to go with a box mix because it was on sale at my local Ralphs.

The cake all together cost under $3.00 which is pretty awesome. I made the cake for my Valentine – my husband – so I made the cake in his favorite flavor – Chocolate with chocolate frosting. Then for decorations I decided to try something new – I printing out different hearts and other valentine’s day goodies from my computer to act as inexpensive decorations.

I was lucky enough to have on hand – some heart cake molds

The one thing to make sure when cooking a cake is that the cake pan is well greased – I use veggie oil – you can use butter or Pam – whatever you use – make sure nothing will stick. It is NOT fun

Again the items that I used were on sale – I typically have a price point for different items – in which I will buy without a coupon. Cake Mix when it is a dollar and under and frosting is under 1.50. What are YOUR price points for these items?

I’m planning to try a couple of new dishes this week. I’m bored with my usual meals. I also need to use a big ol’ turkey I still have in my freezer, so I’ll be making that mid-week.

Linguine with Clam Sauce

Surprisingly, this recipe has been well received by my family. The kids even enjoy it. It is also relatively inexpensive because I had everything but the canned clams in my stockpile. I used fettuccine this time because that’s what I already had on hand.

Linguine with Clam Sauce

Ingredients:

1 box of Linguine
2 cans of chopped clams* (undrained)
1 28 oz can diced tomatoes (undrained)
1 tbsp olive oil
1 cup chopped onion
1 tsp minced garlic
Pinch red pepper flakes
S/P

Directions:

1. Cook linguine according to package directions
2. Heat oil and add onion, cook approx. 5 minutes
3. Add garlic and red pepper, cook approx. 30 seconds
4. Add tomatoes, reduce heat to medium-low and cook 20 minutes (cook uncovered unless juice starts to disappear-want the liquid)
5. Add clams & S/P, cook 5-10 minutes
6. Toss with hot pasta, serve immediately

I serve with garlic bread or bread from my bread machine

* I only use 1 can of clams

Farm Fresh Meal Idea: Ground Chicken & Feta Burgers

I’m sick of the cold! I’m ready for warm weather & getting outdoors to grill. I decided to post a recipe to enjoy with the temperatures expected to be in the high 50’s & low 60’s this weekend. Whoo! This weeks recipe is based on the Farm Fresh ad for the week of 02/09.

Ground Chicken & Feta Cheese Burgers

Ingredients:
1 package of ground chicken (or turkey)
1/2 package of Feta cheese (prefer tomato & basil)
~5 green onions
Burger buns

Directions:
1. Chop approximately 5 green onions
2. Combine ground turkey, green onions & 1/2 a container of feta cheese
3. Form into patties
4. Grill patties and place on buns
5. Serve with lettuce, tomatoes, onions (or other preferred burger toppings)

Serve with McCain fries ($3) and FF canned corn ($0.50)

Prices:
Perdue ground chicken $2.50
Farm Fresh Burger Buns $0.99
Green Onions $0.79 ($0.40)
Athenos Crumbled Feta Cheese $2.99
$1/1 Athenos Feta, Hummus, Baked Pita Chips or Greek Yogurt printable
Final: $1.99 each ($0.99)

$4.88 plus cost of sides and burger toppings

Ingredients:

Final=$0.64
**(1) 12 oz package of Harris Teeter Ready Quick Steam Brown Rice $1.67

Kroger Meal Idea: Salmon with Potatoes & Asparagus

Madame Deals put together a simple & healthy meal based on the Kroger ad for the week of 02/06. This meal is right up my families alley. We adore fish and asparagus! Yum!

Salmon with Pan fried potatoes and steam Asparagus

The salmon was $6.00 for three large pieces. I brushed it with olive oil and pesto. My son can’t have nuts so I only used olive oil on his and mine. I baked it at 400 degrees for 10 minutes or until it was pink.

Then I chopped up four potatoes from the bag I bought two weeks ago for $1.00. I threw in some salt, pepper, olive oil and rosemary and I cooked until they were brown.

Finally, I steamed asparagus. It was on sale for $1.99.

Frugal Eats: Yummy Snow Ice Cream

Are you being bombarded with snow? I’m lucky and have not experienced the current snowstorm that covered most of the nation. If you’re in one of the 36 states that got hit, you might enjoy this Snow Ice Cream recipe from Budget Savvy Diva:

Ingredients:

6 C of very clean snow
* 1/2 C Sugar
* 1 C Milk
* 1 tsp Vanilla

– and other yummy goodies

Directions:

* Put the snow in your biggest bowl.
* Sprinkle sugar over the top of the snow.
* Add milk & vanilla and then gently stir until the snow squishes down to about 1/4 of the volume you started with.

Once everything seems fully combined, dish into bowls and enjoy immediately!
