Surprisingly, this recipe has been well received by my family. The kids even enjoy it. It is also relatively inexpensive because I had everything but the canned clams in my stockpile. I used fettuccine this time because that’s what I already had on hand.
Linguine with Clam Sauce
Ingredients:
1 box of Linguine
2 cans of chopped clams* (undrained)
1 28 oz can diced tomatoes (undrained)
1 tbsp olive oil
1 cup chopped onion
1 tsp minced garlic
Pinch red pepper flakes
S/P
Directions:
1. Cook linguine according to package directions
2. Heat oil and add onion, cook approx. 5 minutes
3. Add garlic and red pepper, cook approx. 30 seconds
4. Add tomatoes, reduce heat to medium-low and cook 20 minutes (cook uncovered unless juice starts to disappear-want the liquid)
5. Add clams & S/P, cook 5-10 minutes
6. Toss with hot pasta, serve immediately
I serve with garlic bread or bread from my bread machine
* I only use 1 can of clams
