These Paleo Meatballs are not only meaty, juicy and satisfying, but they are also full of good-for-you ingredients like sweet potatoes! I’d venture to guess that you’ve never tried sweet potatoes in your meatballs before, but after you try this great Paleo Meatballs recipe, you won’t go back!
A lot of people think that eating a special diet like Paleo is too restrictive, but that simply isn’t the case. There are TONS of fantastic healthy recipes out there no matter what kind of special diet you are on. You probably have most of the ingredients in your fridge or pantry already, and those that you don’t have can easily be substituted for other things if need be (you might switch out avocado oil for olive oil, for example). Paleo Meatballs:
*GLUTEN FREE*
Ingredients
3 tablespoons avocado oil
1 pound ground beef
2 eggs
½ cup ground flaxseed
2 cups sweet potatoes, peeled and shredded
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried basil
1 teaspoon oregano
½ teaspoon ground black pepper
1 teaspoon ground sea salt
Directions:
- Heat oven to 400 degrees.
- In large saute or frying pan, heat avocado oil over medium heat. (It’s important to use avocado oil or another oil with a very high smoke point.)
- In large bowl, combine all remaining ingredients.
- Form meat mixture into 20 ping pong sized balls.
- Brown the meatballs in heated oil for 2 minutes on each side until deep golden brown.
- Drain and move to cookie sheet – or if using cast iron skillet, place directly in oven.
- Bake meatballs at 400 degrees for 15 minutes or until internal temperature reaches 165 degrees.
