This quick simple pasta salad recipe is perfect for Spring and Summer potlucks, barbeques, lunches, and makes a great side for dinner any night of the week.
For a large gathering I would make at least a double batch, and trust me you will be bringing home and empty bowl. It truly has the flavors of the classic, favorite sandwich with a twist. I have been known to reserve a portion to eat as my own lunch the next day.
For a lighter version-substitute plain Greek yogurt for mayonnaise and some of the ranch, reduce bacon to 4 pieces, and cut cheese in half.
Quick Simple Pasta Salad Recipe:
Ingredients:
2 cups dry uncooked pasta
1 cup shredded cheddar cheese
¼ cup ranch dressing
¼ cup mayonnaise
1 small tomato
2 cups lettuce,diced
2 hard boiled eggs
4-6 pieces of cooked bacon
1 tsp. Garlic salt
1 tsp. Apple cider vinegar
salt and pepper to taste
Directions:
- Boil pasta according to package directions, drain, run under cold water to cool, set aside.
- Dice tomato, eggs and lettuce into small pieces.
- Chop or crumble bacon with your hands.
- Combine all ingredients in a large bowl and stir well to thoroughly mix.
- Refrigerate pasta for at least 2 hours – overnight for best flavor results.
- For outdoor parties extend the “shelf” life of your salad by keeping it covered and placing it in another bowl with ice to maintain a cool temperature. You can also get something similar to THIS ice bowl if you’re always bringing dishes to events.
To save time, cook the bacon early. I also cook an entire package of bacon and throw the rest in the freezer to use for recipes such as this one.
