Take a simple recipe for banana muffins and add a twist by making popovers! This is the same recipe for muffins but cooked in a popover pan. Don’t have a Popover Pan? You can buy one HERE or just use this recipe to make muffins.
The caramel icing topping adds a fun sweetness to the muffins that can be omitted if you prefer.
Recipe for Banana Muffins as a Popover:
Ingredients:
4 Ripe bananas
1 2/3 Cups of sugar
2/3 Cup vegetable oil
2 1/2 Teaspoons vanilla
4 eggs at room temperature
3 1/4 Cups All-purpose flour
1 Tablespoon baking powder
1 pinch of salt
1 1/4 Teaspoons cinnamon
Hershey’s Caramel Topping
1/2 Cup Vanilla icing, melted
Directions:
- Heat oven to 350 degrees
- Use butter or anti stick cooking spray to well grease your popover pan.
- Cream together bananas, sugar, oil and vanilla.
- Add eggs one at a time to mixture.
- Mix dry ingredients flour, baking powder, salt and cinnamon in a separate bowl.
- Slowly add the dry ingredient mixture making sure to blend well before adding more.
- Once all ingredients are completely blended together fill your popover pan 3/4 full.
- Bake for 50-60 minutes or until inserted toothpick comes out clean.
Makes 12-14 popovers
To prepare the glaze:
Use your favorite vanilla frosting (I used Betty Crocker Whipped butter cream), 1/2 cup melted in the microwave for 20 seconds and mixed well until smooth and silky. Drizzle glaze over popovers then drizzle Caramel Topping over popovers to finish it off. YUM!
